Open six days
We are a small kitchen with one wood hearth, one dal we have been arguing about since 2021, and a room that fills with the same forty faces most weeks.
Breakfast runs from eight, lunch is short and quick, and dinner is the part we take our time over. Nothing on the menu stays if it stops making sense — the trout changes with the season, the vegetables change with the valley farms, and the fire stays exactly the same.

Our story
Aavash came back to Lalitpur after eight years cooking elsewhere, took the lease on a converted ground-floor room in Jhamsikhel, and poured chiya and coffee for two years before anyone let him near a dinner service.
The hearth went in during 2018. Most of what we do now still comes back to that decision — to cook slowly, over wood, and let the ingredient do the interesting part.
How we cook
The fire is lit at six. Everything else waits for it.
